SEASONINGS & SPICES
SAUCE
Shoyu, soy sauce, is one of the key ingredients in Japanese cuisine. Its main ingredients include soybeans, koji-inoculated wheat, salt and water. There are 5 main categories of shoyu; regular koikuchi shoyu, light-colored usukuchi shoyu, tamari shoyu, saishikomi shoyu, and shiro shoyu. Less sodium (reduced salt) shoyu is a well known, newer variety of shoyu used especially among health-concerned population.
Koikuchi Shoyu
Regular soy sauce. Soybean to wheat ratio is about 50:50. Sodium content is about 16%.

Shiro Shoyu
Shiro shoyu is made mainly from wheat with some soybeans. It has an even lighter color than usukuchi shoyu with similar sodium content.
Gen'en Shoyu
Also known as low sodium, less salt, reduced salt soy sauce. The salt content is reduced either by a special process or diluting with water.

WASABI
Wasabi is a root vegetable which naturally grows in clean swiftly running mountain streams or irrigated terraced fields. It has pungent spiciness.
