SEASONINGS & SPICES

SAUCE

Shoyu, soy sauce, is one of the key ingredients in Japanese cuisine. Its main ingredients include soybeans, koji-inoculated wheat, salt and water. There are 5 main categories of shoyu; regular koikuchi shoyu, light-colored usukuchi shoyu, tamari shoyu, saishikomi shoyu, and shiro shoyu. Less sodium (reduced salt) shoyu is a well known, newer variety of shoyu used especially among health-concerned population.

Koikuchi Shoyu

Regular soy sauce. Soybean to wheat ratio is about 50:50. Sodium content is about 16%.
