He explained to us about their shuzo’s motto and features of their new sake and Nanotsuki 60.
Their motto is to embrace the natural bounty of the region, and to harness the power of the local ingredients.
Besides that, they don’t use any temperature control though other breweries which use refrigeration techniques. Rather, they allow the sake to brew in the natural temperature conditions of the season, just as it has been done since time immemorial.
Their philosophy makes their sake mild and deep umami.
Tatsuya Ishikawa,Toji at Tsukinoi Sake Brewery, A.K.A Sake Godzilla a says that;
Wherever sake breweries are, they can make the same sake due to the development of technology. However, I believe that now is the time for the requisite sake that inhabits our individuality and gives people the strength to live.
